This depends upon many factors. How big is the project? Will you be able to assist? How quickly can you make decisions?  Patience is essential, remember that organization is an ongoing process.  

What should I do before the professional organizer arrives? 

Relax and leave everything the same, this allows the organizer to better understand your situation.  Start making a list of what is working and what is not and outline any possible goals.

What is involved in a typical session? 

First, an on-site evaluation and written needs assessment are conducted to determine the specific nature of your project and your individual requirements. A letter of agreement and confidentiality agreement are provided which outline all fees and services.

Next, a systematic plan will be developed which will guide you through the organizing process. This may involve on-site consulting, coaching, or a combination of both.
